Grilled figs with prosciutto
a big hit every time
10 mins prep, 4 min cooking
• Ripe figs, at least 8
• 2 tbls balsamic vinegar
• 2 tbls extra virgin olive oil plus extra for serving
• 12 slices of prosciutto
• Rocket to garnish
• Parmesan cheese shavings & crushed black pepper to serve
Stand figs upright & quarter, not all the way down, ease them open so they make a star shape
Brush with the a mix of balsamic & e v olive oil.
Place figs cut side down on griddle pan & cook for 3-4 minutes alternatively place cut side up & brown under a grill.
Place half the prosciutto on the griddle and cook til crisp, remove & keep warm while cooking the remaining prosciutto
To serve: arrange figs on top of some prosciutto, scatter with parmesan & black pepper & more olive oil, you can cut up small pieces of prosciutto to sprinkle on top too, then some Rocket to garnish & to add a bit of colour

or the use of the letterpress technique in image 2, yes its more expensive but defiantly worth it.

Lula of My Dreams
My Fave Dessert – ETON MESS
I've been telling my friends to make this easy dessert for years. Its a show stopper, try it out next time. It's great for kids, dinner parties or that special one-on-one occasion. To save time I always buy my meringues instead of making them even though they are simple to make
INGREDIENTS
1 punnet strawberries and or raspberries
4-8 meringue nests
2 cups double cream
1 Tbsp icing sugar for dusting
Berry coulis or compote
Vanilla ice cream
Mint sprig for decoration
METHOD
Halve your strawberries
Crush up meringues in large pieces, set aside
Beat cream til soft peaks form & slowly stir in some blended strawberries, berry coulis or berry compote, then last minute stir in halved strawberries, crunchy meringue (make sure its not swimming in cream its only for coating). Spoon a scoop of ice cream into a cocktail glass & add your mixture followed by more strawberries & berry coulis then dust with icing sugar, finish with mint sprig. Done!

Wednesday Findings
A few of my dearest friends have recently been engaged which excites me in many ways, mainly because now I have a proper excuse to scope out the internet on all the beautiful things you can do with weddings these days.
I have had an idea that we could make some DIY items that will add that special something on the day, one of them is paper mache string spheres to house white tea lights which we can hang. Here is some similar.
