Parmesan Roasted Potatoes

Ive started craving potatoes again after not really having any for 6 months.
It's still chilly outside & I just want to eat carbs all day long.

Here is a great recipe for baked potatoes with a twist from chicho's kitchen

A little olive oil combined with salt, pepper, paprika & some minced garlic, some parmesan, & you're done. The mixture coats each potato wedge, which infuses it with flavor and a heavenly aroma that is just irresistible.


 

Ingredients:

4 medium red potatoes
2 tbsp olive oil
1/3 cup parmesan cheese
1 tsp garlic powder
1 tsp paprika
salt & pepper to taste

 aioli for dipping tapas style

Preheat the oven to 200ÂșC. Cut the potatoes in small wedges or medium cubes

In a small bowl, combine the parmesan, garlic, and paprika and set aside. Next, toss the potatoes & oil together in a mixing bowl then add the bowl of cheese & seasonings and stir to coat.

Arrange them on a cookie sheet in a single layer.

Bake for about 30-35 minutes then remove from oven, turn over all the potatoes.

Bake for another few minutes until crispy and golden.


a quick aioli recipe:

2tbs Mayo (or more depending on how much you want) 
1t of fresh squeezed lemon
1 - 2 crushed garlic cloves
pinch of salt
combine & whisk

How to Ice magic

If you or someone you live with has a crazy addiction to chocolate like my Cameron you will probably save a bit of cash making your own Ice Magic every now & again & seeing as though we buy 2 bottles of it a week I will be making a bulk lot to last him for a while.

How to
All you need is:
1 1/4 Cups Chocolate Chips
1/2 Cup Coconut Oil (measured when solid)



Melt chocolate chips and coconut oil in the microwave about 1 minute (depending on your microwave). Allow to sit a few minutes to allow the heat of the oil to melt the chocolate chips and then stir until smooth. It will be runny. 





Pour into a bottle. We used a recycled pickle relish bottle. (We recommend a glass bottle if you’re gonna refrigerate and then heat.) 



Store in the refrigerator (though in the summer it’s likely to stay liquidy unrefrigerated). To serve, heat the glass bottle (open cap) in the microwave for 30 seconds until liquid. Stir and continue heating at 30 second intervals if not liquid after the first 30 seconds. Pour over your favorite ice cream and in a few seconds you will see magic!
